Cauliflower Crust Pizza

This recipe is a winner!  Of course, I could not make it completely as stated.  Here are my changes:

I did not do the Hawaiian part.  I did not do the pineapple and Canadian Bacon.

I sauteed onions and mushrooms
1 medium onion
10 large white mushrooms

The I used Hormel Turkey Pepperoni.

I had 1/2 of the pizza, fully satisfying.

Weight Watcher points – 20 for the whole thing.

Flounder Chickpea Curry

 

Ingredients:

1 – 3 oz flounder fillet
1/2 cup canned chick peas
1/2 onion
1/2 cup frozen shitake mushrooms
1/2 red pepper
1/4 tsp thai chili powder
1 tsp Penzy’s Sweet Curry Powder
1/2 cup coconut milk
2 tbsp Soy Sauce
2 tbsp Rice Vinegar
3 tsp Canola Oil

1 cup cooked angel hair pasta

Cut up your onions and peppers to the size you like.

Cut your fish into 1/2 inch strips, short way on the filet.

Cook your pasta.

Heat your wok, to a comfortable high heat.  Add the oil.  Then the onions, red peppers, and chick peas.  Sautee/stir fry until the onions are soft.  Add curry powder, chili powder, soy sauce, and vinegar.  Fry until fragrent.

Make a well in the middle of the ingredients.  Put the fish pieces in the center of the well.  There should still be plenty of liquid.  Cover the fish with the veggie mixture.  Allow fish to cook for about a minute or two.  Add the coconut milk.  Add the noodles.

Cook until done.
